Food allergy is a hypersensitivity reaction of the immune system to a food protein called "allergen". It can be immediate or delayed, limited or generalized. 
The reaction occurs after ingestion or inhalation of a food. It can also occur after a food comes into contact with the skin. An allergic reaction is sometimes severe and can even be fatal.
Although allergies can occur at any age, they are particularly common in children. The most noticeable onset is before the age of 4. Many children will outgrow their allergy by adulthood. 
Health Canada estimates that 6% of babies, 3% of children and 1-2% of adults are affected by one or more food allergies.

Food intolerance

This is an inability to digest or absorb certain foods or their components. The immune system is not involved. Rather, it is the digestive system. To learn about the symptoms, consult the food intolerance page.  

Gluten-free versus wheat-free

A "gluten-free" claim cannot be used interchangeably with a "wheat-free" claim. Gluten can be present in products that do not contain wheat. Gluten is present in wheat (including spelt and kamut), oats, barley, rye and triticale. Individuals with a wheat allergy react to wheat gluten proteins, as well as other proteins present in wheat. Individuals with celiac disease, an autoimmune disorder among genetically susceptible individuals, experience adverse symptoms when exposed to gluten from any of the sources listed above. "Gluten-free" claims must follow the requirements outlined above.
